About the Department
The research area spans a broad spectrum of applied and basic protein chemistry with special emphasis on plant proteins, enzymes of relevance to food processingand bioactive peptides. Directed research on structure–function relationship of proteins/enzymes to gain insights into their biological roles through biophysical, biochemical and biotechnological approaches has been one of the major thrust areas of research. The department has pioneered technologies harnessing plant proteins for their use in food and food products. Graduate students are exposed to various in-house programs to understand deeper insights towards the role of proteins in food science and technology which includes biophysics, biochemistry, molecular biology, nutrigenomics, proteomics and nutrition.
