R&D Activities

 

Meat and Marine Sciences department mainly focuses on four thrust areas viz.

  • Hygienic meat production and value addition to meat processing by-products
  • Meat quality and safety – development of molecular techniques for rapid detection of meat pathogens; antimicrobial packaging system for meat and fish products
  • Meat, Fish and Egg Products development – Novel products; convenience products; shelf stable products; value added products
  • Marine nutraceuticals – Nutraceutical properties of bioactives from seaweed; marine carotenoids; immuno-stimulants from marine resources; antioxidants from marine resources

Some of the research activities are:

  • Value addition to meat, fish and poultry products/by-products and development of molecular techniques for meat quality evaluation
  • Towards healthier meat products: Development of healthful meat based products and their functional and nutritional characteristics
  • Bio-preservation technologies for the shelf life extension of meat and fish products
  • Antihypertensive and anti-hyperlipidemic effects of polyphenols and polysaccharides from Indian seaweeds
  • Biochemical and molecular characterization of carotenoids produced by marine bacteria
  • Marine bacterial enzymes for production of bioactive nytraceuticals
  • Development of value added fish meat based products and designing /demonstration of small scale fish processing equipments
  • Comparative evaluation of enzymatic and fermentative methods for preparation of chicken liver hydrolysates : Recovery, bio-functional characterization, and application
  • Fermented fish products of North East India: Characterization of microbes and their healthful metabolites for application and scale-up
  • New approaches towards understanding disease dynamics and to accelerate drug discovery: Preparation and characterization of meat based bioactive ingredients through fermentation and enzymatic hydrolysis and evaluation of their chemo-preventive effects in in−vivo and in−vitro models
  • Zero Emission Research Initiatives for Solid Wastes from Leather processing (ZERIS): Animal and bird feed and Probiotic metabolites from fleshings
  • Chitosan based nanoparticles for food application
  • Low cost animal feeds
