The department has developed several protocols and processes related to pre and post-harvest handling of fresh produce and value added products from fruits and vegetables, most of which have already been commercially exploited by the industry. For example, Technology protocol for export of alphonso mango and banana (var. Dwarf Cavendish) by ship and processes related to dehydration of fruit and vegetable (including mushroom), fruit juice or pulp, fruit juice concentrates, fruit juice beverages, fruit bars, garlic and onion powders, pectin from pectinaceous materials, minimally processed vegetables as well as traditional products like jams, jellies and preserves, pickles and chutneys, candy or tutti-frutti etc. have already been released to the industriesfor commercial exploitation, both in domestic and export markets.
