R&D Activities

 

Food Safety and Quality is a multi-faceted discipline involving microbiology, chemistry, biochemistry including the cutting edge area of molecular biology and biotechnology. The department aims at being a leader in the field of food safety and quality through excellence in research with the help of Ph.D. scholars, M. Sc. / B. Tech. dissertation students and project assistants. The faculty of the department have been recognised as Ph.D. guide (Biochemistry / Biotechnology / Life science / Chemistry) by AcSIR and University of Mysore, Mysuru. Research themes of the department include:

Microbiology and Molecular Nutrition:

  • Genetic recombination studies in food borne microorganisms
  • Bio-prospecting of molecules that modulates 5' adenosine monophosphate-activated protein kinase to target Type-2 diabetics

Biochemistry and Nutritional Research:

  • Isolation and characterization of plant protein/protein hydrolysates
  • Cloning and expression of synthetic protein with high nutritional value and for specific health needs
  • Assessment of protein quality by protein and proteomics analysis
  • Nutrigenomics study to decipher the effect of nutrients (proteins) on gene expression
  • Structural and molecular characterization of plant (legume) lectins
  • Purification and characterization of pectin modifying enzymes for food and industrial applications
  • Inhibition of cell wall hydrolases for delaying fruit softening during ripening
  • Value addition to Bio-waste (Pumpkin seed and peel)
  • Nutritional- antinutritional and functional properties of fractionated flours and enzyme inhibitors

Biotechnology and Molecular Biology:

  • Development of high throughput molecular methods for detection and identification of genetically modified organisms (GMOs) in foods, allergens and food pathogens to monitor food safety and traceability
  • Cloning of GMO specific sequences and creation of a plasmid library to be used as alternate reference materials for GMO quantitation
  • Genetic mapping of GMOs
  • Studies on the effect of food processing on nucleic acid amplification
  • Cloning, expression and characterisation of wax ester synthases

Food Additives and Chemical Contaminants:

  • Development and validation of analytical methods for food additives, heavy metals, aflatoxins, naturally occurring toxins, Vitamins, antibiotic residues, trans fatty acids, acrylamide etc., in food
  • Risk assessment analysis of food contaminants (heavy metals, aflatoxins)
  • Development of Certified Reference Materials (CRMs) for pesticide residues and heavy metals analysis
  • Development of methods for authentication of Dairy products
