Research activities involve development of economically viable process for the isolation of arabinoxylan from defatted rice bran/wheat bran and incorporation of the same in various low fibre products for various health benefits. Expression of dietary fibre degrading enzymes isolated from synbiotic preparations are being studied. Elucidation of the role of various functional groups of bioactive oligosaccharides on immune modulation, antioxidant and prebiotic activities are being studied. The structure – function relationship of non-starch polysaccharides from various edible plant sources with respect to linkage, branching, molecular weight and associated phenolics are being investigated.
Role of dietary components on the molecular understanding of cancer and ulcer pathogenesis is being investigated in cancer cells, animal and microbial models. Development of food formulations from dietary sources for treatment of cancer/ulcers are being investigated. Vitamin C ester and nutraceuticals from natural sources are being investigated as anticancer agents on human cancer (ovarian, breast, cervical cancer) cells. Development of recombinant viruses (New castle disease virus) as therapeutic agent for treatment of cancers are being studied.
Role of lipids in phytonutrients (carotenoids) bioavailability, metabolism, structural and bio-functionality at molecular level is being studied in suitable in vitro and in vivo models. Development of nutritious food formulations with protein and carotenoids to tackle malnutrition and eye related disorders are being pursued.
Nutrition of micronutrients from foods
Strategies to improve the bioavailability of trace minerals (Se, Cu, Mn, Cr, Zn) from common consumed foods are being investigated. Influence of supplementary trace minerals (Ca, Fe) on status of certain essential trace minerals is being studied.
Efforts are being made to understand the influence of micronutrients on cognitive performance and physical endurance in animal models and human subjects. Lipid biochemistry
Dietary lipids including omega-3 fatty acids from plant source and fish oil are being investigated for their health beneficial properties especially on lipid metabolism and inflammatory mediators in experimental models (ulcerative colitis). Maternal dyslipidemia and maternal supplementation of essential fatty acids (ALA, EPA, DHA) on developing foetus and the mechanism of modulation of lipid inflammatory mediators on gene regulation are investigated. Synthesis of diacylglycerol (DAG) oils from rice bran oil waste and other oils and the health beneficial effects of DAG oils on obesity and lipid metabolism are being investigated.
Research activities in nanotechnology includes nanoencapsulation of phytonutrients using natural biodegradable polymers, characterization of nanocapsules to enhance the stability, hydrophilicity, bioavailability and efficacy (antidiabetic, antiangiogenic, anticancer) of these phytonutrient in suitable model systems are being studied.
